Spanakopita (in English)

Spanakopita is a traditional Greek dish which is usually made with phyllo dough. I am sharing a recipe which uses store-bought phyllo dough.

INGREDIENTS :
-400 g frozen spinach
-200 g feta cheese
-2 eggs
-100 ml joghurt 
-100 ml water
-half a tsp baking soda
-1 onion large
-2 tbsp olive oil
-phyllo dough
-spices: pepper, nutmeg, lemon zest

METHOD:
Heat the spinach and drain it thoroughly. Chop the onion into cubes and saute on olive oil. Add feta and taste it. Spice it to your liking. Remove from stove and stir in 2 beaten eggs. 

Put baking sheet in 20x30 baking tin. Put three layers of dough. Pour the filling and spread it evenly. Put 3 layers of dough on the top. Cut the pita in squares using sharp knife. Pour the mixture of water, yoghurt and baking soda on it. Let it soak for 10 minutes, then put it in oven pre-heated to 170°C. Bake for 40 minutes, leave in turned-off oven for 5 minutes. Wait 20 minutes before serving.
